It’s been awhile since I last posted on here. Back in April I was able to get a job teaching English online. It started eating up my time, and before I knew it, I was already back in America. I’m proud to say that I’ve finished up my first semester of graduate school! The new semester starts in two days (the New Year has also just passed), so I am organizing myself for a healthier life.
So, let me be a trope here and tell you how my goal this year is to get into better shape. Let me explain!
When I was in China, I put on a lot of weight. I swore I would never get this big again, but I did. The fact is that it happened at a time where I wasn’t taking care of myself mentally, and that reflected outwardly. Luckily, I realized a need to change last Spring, and have, at the very least, halted my weight gain! I remember coming back from a week in Singapore and Taiwan, and seeing that I had gained even more weight in such a short period of time. While I believe that a lot of the extra pounds I saw on the scale that day were water weight from the hot climate, it encouraged me to make some changes. For example, I managed to stop eating a daily chocolate bar. About a month later, I was pleased to hear Christina tell me that she noticed my efforts to be healthier, though I hadn’t shared my attempts with her. Fast forward eight months, and while I haven’t really lost any weight, I am much healthier. During the fall and beginning of winter, I was biking to work and class, leaving me in better shape and resulting subtle changes in my body. I also have transitioned into a vegan-at-home lifestyle. Christina and I are doing this so we can lesson our meat and dairy intake, be more considerate to animals, and lighten our impact on the environment. It’s sort of like acknowledging meatless Mondays, only we have a theoretical meat Monday and everything else is meatless.
Anyway, with my busy school schedule, I need to meal plan for the week. It started out good last semester, but quickly fell into disrepair by the end. This time around, Christina, Tammy (our awesome housemate) and I are signing up for dinner cooking slots, and just overall trying to be more cohesive in our living.
